# Expert Advice:

01 -
  • The spice coating creates this incredible crust that shatters when you bite into it while the inside stays fluffy and tender
  • You can adjust the heat level from mild to fiery and the potatoes still come out perfectly cooked every time
  • These reheat beautifully in the oven or air fryer making them ideal for meal prep and busy weeknight dinners
02 -
  • Overcrowding the baking sheet is the fastest way to end up with steamed soggy potatoes instead of crispy roasted ones
  • Soaking the cut potatoes in cold water for 30 minutes then drying them completely creates the crispiest exterior possible
  • Letting them rest on the baking sheet for just 5 minutes after roasting helps them develop even more crunch
03 -
  • Use a rimmed baking sheet to prevent any oil or spices from dripping into your oven causing smoking and mess
  • Preheat your baking sheet with the oven for 10 minutes before adding the potatoes for an extra crispy bottom
  • Double the spice blend and store the extra in an airtight container for future batches
