03 - Add the halved potatoes to the bowl and toss until all pieces are evenly coated with the spice mixture.
04 - Spread the potatoes in a single layer on the prepared baking sheet, cut side down for maximum crispiness.
05 - Roast for 30–35 minutes, stirring halfway through, until potatoes are golden brown and fork-tender.
06 - Remove from oven, garnish with fresh parsley, and serve with lemon wedges if desired.
