01 - Line a baking sheet or large plate with parchment paper or a silicone baking mat to prevent sticking.
02 - In a medium bowl, combine Greek yogurt, honey, and vanilla extract. Whisk until smooth and fully incorporated.
03 - Using a spoon, drop small mounds (approximately 1 tablespoon each) of the yogurt mixture onto the prepared baking sheet, spacing them slightly apart to prevent merging.
04 - Gently press 2–3 blueberries into the center of each yogurt mound until partially submerged.
05 - If using, sprinkle chopped nuts or shredded coconut evenly over the top of each bite.
06 - Place the baking sheet in the freezer and freeze for at least 2 hours, or until the bites are completely solid.
07 - Transfer the frozen yogurt bites to an airtight container and keep in the freezer until ready to serve.
